Ruby Foo's: Leading the Way in Sustainable Hospitality
Eco-Friendly Innovations
Ruby Foo's draws eco-conscious travelers with its innovative green practices. Originally built in 1962, the hotel implemented, in 2022, systematic sustainable practices throughout its activities. Most obvious in this change is the conception of the renovated Signature rooms, for which all the research was done in-house. This rewarding process involved learning about ecologically friendly renovation practices, from the glue in the wallpaper to the sourcing of wood. The renovation resulted in 22 rooms being transformed so far into eco-friendly Signature rooms, featuring cork floors, eco-friendly bedding, energy-efficient lighting, local granite and much more.
Each floor now features water fountains that conserve resources while keeping guests hydrated, promoting the use of reusable water bottles and eliminating single-use plastics. Electric vehicle charging stations encourage clean transportation, and they have switched to reusable wooden key cards instead of plastic ones. Locally sourced, biodegradable bath products and a coffee-pod recycling and composting program highlight the hotel's commitment to supporting local artisans and reducing waste.
"Through our extensive research on sustainability, we've discovered that what makes something eco-friendly isn't always obvious. By researching everything ourselves to the fullest extent possible, we ensure ongoing internal education for our team and share these insights externally through social media and newsletters. We aim to inform and educate people about our work, its impacts, and why it's important, showing how anyone can contribute to sustainability."

The Urban Farming Project
Since 2023, the rooftop of Hotel Ruby Foo's has hosted a vibrant urban farm managed by MicroHabitat. This space grows vegetables, herbs, and edible flowers without harmful chemicals, producing approximately 300 pounds of crops annually. These harvests are shared equally between the hotel's employees and local food banks, enhancing food security and community well-being. The urban farm also serves as an educational platform where the team can learn about urban farming, sustainability, and local food production, through educational workshops and garden visits.
Promoting Sustainable Practices
Hotel Ruby Foo's commitment to sustainability extends beyond environmental stewardship to fostering social impact within the community. Surveys conducted among their guests have shown that sustainability is a significant driver for those staying at the hotel. By collaborating with local artisans for eco-friendly products and participating in community donation programs, the hotel supports economic growth and social well-being.
The urban farm not only provides fresh produce but also strengthens local food security, demonstrating a model for urban resilience. Through these initiatives, Ruby Foo's actively contributes to a healthier, more connected community, reinforcing the vital link between sustainability and social responsibility.
"My recommendation to hotels beginning their sustainability journey is to integrate sustainable practices using a systemic approach. Start with small projects; it doesn't have to be a big and daunting task. Take baby steps by evaluating what changes will have the biggest impact and are easiest to implement. This approach will help you make significant progress over time."
